I was trying to think what I could post here for the holiday season. I’ve decided to share with you the recipe for the best cookies you’ve ever had in your life (IMHO). I have kept this recipe a secret for over 35 years. As a special treat, my wife or my daughters will make these for me at Christmas and my birthday. To be honest, it’s not my recipe (I can’t even boil water). I got it from a young lady I was seeing in high school. I think a version of it was even posted once in the Dallas Morning News.
Note that this is not an Ed Foreman approved dietary item (probably not an approved item on anybody’s diet), but they are sooooo good, sometimes you just have to splurge.
Unlike most cookies, you don’t bake them (hence, the name).
No-Bake Cookies
2 cups white sugar
1/4 cup cocoa
1 stick butter
1/2 cup milk
1/4 cup peanut butter
1/4 cup marshmallow cream
1 teasp. vanilla
3 cups quick rolled oats
Get wax paper spread out
Before you start - measure out peanut butter & marshmallow cream. Also measure Oats in separate bowl. Have vanilla & teaspoon ready.
1. Mix sugar & cocoa in saucepan. Slowly stir in milk - then add butter (cut up). Place over medium heat & bring to a rolling boil, stirring constantly. Boil about 1 minute.
2. Remove from heat. Add peanut butter & marshmallow cream. Stir to dissolve. Stir in vanilla & then oatmeal. Mix until oatmeal is covered with chocolate mixture.
3. Drop by spoon onto waxed paper.
4. Let them dry.
*Note: We have found that you must use real butter. We tried it with margarine, and the cookies never got hard.
